History

The Cart was set up by business partners Martin Satchell and Nguyen Hoang Loan.

Martin was best known in Hanoi for his work as chef trainer at KOTO having previously worked in catering as he worked his way across the world from his home city of Coventry to his adopted new home of Melbourne, Australia. Loan is a Hanoian who previously worked in tourism before later managing a restaurant and a bar.

The Cart was originally conceived as a mobile vehicle to stand at RMIT to serve its staff and students. Later another Cart was located in Le Dai Hanh near Vincom Towers but eventually in 2009 Loan and Martin pooled their resources and opened the Au Trieu branch.

Sadly on Christmas Day 2009 Martin died after a short illness. In the New Year, Martin’s friends gathered at KOTO to share their loss and memories of this much loved man.

Loan continued the business with the support of her sisters and staff. In 2010 she married Steve Jackson an old KOTO colleague of Martin’s. Steve continues to offer marketing support as Loan manages The Cart day-to-day.

In 2011 Loan opened The Cart Nghi Tam, a year later in 2012 The Cart Au Trieu moved to larger premises across the alley becoming The Cart Tho Xuong.
